29. The very first thing you should do before sharpening a knife is check the relief. To do this, put the blade between your thumb and finger and slowly move the blade out, noting how thick or thin it feels. If the relief of the blades is good, you will hardly feel the cutting edge separate your fingers and it will feel as though there is no change in the surface, that it is flat.
